酸辣酱——材料 Ingredients:红辣椒red chilli 100克(g),指天椒red chili padi 20克(g),红葱头shallot 80克(g),蒜头garlic 20克(g),香茅 1根(stalk),柠檬叶kaffir lime leaves 5克(g),酸柑汁 10毫升(ml),盐和糖salt and sugar适量(adequate)。 酸辣酱——做法:将红辣椒、指天椒、红葱头和蒜头放入搅拌器搅烂。热油镬炒香料,加入略拍烂的香茅和柠檬叶炒至出味,最后加酸柑汁,再以盐和糖调味。

酸辣臭豆虾——材料 Ingredients:虎虾(洗净去肠泥)tiger prawn(cleaned and de-vined) 10只(pc),臭豆(掰开汆烫)smelly beans/petai(break half and blanched) 30克(g)。 做法:(1)虾洗净剪去虾须,再油炸至半熟,捞起沥干油。(2)炒香酸辣酱。(3)加入虾和臭豆拌炒至熟即可。公仔箱論壇& E+ Y/ V0 L  D$ _2 N6 ]* E

炒臭豆时留意火候,过熟的臭豆会变苦,整道菜也会变质。

~ I likes this recipe but need to less out red chili padi
